Christmas Cake with a Santa Figurine

This Santa cake was a present for the pre-school teachers for my kids… what better way to say thanks to the teachers for all their effort in looking after my kids? Cake. Yum. And a pretty cake at that. This was a chocolate mud cake inside. See my recipe here. I specifically chose that flavour in case some of the teachers didn’t like fruit cake (I know it’s not everyone’s cup of tea!) The Decorations The present was formed just within my fingers and the bow was also created and attached without any special equipment – just a knife tocontinue reading…

Burger and Chips Cake

Mmmmm…. this burger cake fooled a lot of people! It was soooooo much fun to make 🙂 I’d always wanted to try making a fake-burger cake and this was the perfect time… Phil’s birthday. He loves burgers (and cake) so the 2 went together hand in hand. I’d watched a video or two about how to create one and I also wanted to keep it as simple as possible (that’s how I always roll – simple.) How I Made It I used a very small round tin to bake 2 cakes (I think they were vanilla and chocolate in acontinue reading…

Baby Elephant Cake

I made this Baby Elephant cake at a course at a professional cake shop. I was attracted to the course because the cake looks so amazingly professional AND I was pregnant with my second baby at the time! Sometimes cakes are often deceiving. They might look so fantastically complicated but actually only be the simplest on design. This was one cake that did teach me a few new techniques and equip me with a new confidence. But it was actually just a few simple steps broken down. Here is my impressive looking cake! Steps In the course, we firstly colouredcontinue reading…

Ann’s 60th – 2 Tiers with Ribbon Roses

You think making beautiful roses is too hard? Nope. Read on. This cake was an order for a paying customer… in chocolate mud. The only request from my customer was that Ann liked blue – lots of blue! And she was happy with modern roses. So I became creative! I baked 2 sizes of round mud cakes, and covered them with the matching dark chocolate ganashe. Then came the pale blue coloured fondant. I stacked them and instantly – kapow – a professional looking cake. The fun decorations came next. A mix of white, dark blue and light blue ribboncontinue reading…

White Chocolate Mud Cake Recipe

Out of all the mud cake recipes, this would have to be my second favourite flavour. Another slight variation of the classic dark chocolate mud cake, this truly is very easy to master. Ingredients 350 grams white chocolate pieces 225 grams butter 600 mL water 3 Eggs 400 grams castor sugar 400 grams self-raising flour  Instructions Preheat oven to 170C/325F. *Please note: This mixture is quite runny, use a solid cake tin, not a spring form tin. *Tip: Line tin with baking paper, this will make the cake easier to remove from the tin, no sticking to the sides. Incontinue reading…

My Grandpa’s 80th – 2 tier ‘cooking’ themed cake

My Grandpa loves cooking. And he loves cake. And he loves purple. He is also a cake decorator himself. He made my 21st birthday cake 🙂 So when it was his 80th birthday coming up and I offered to make him a special cake, he jumped at it. And when I was lost for ideas, this is what my Grandma suggested. Cooking. A cooking themed cake! He loves baking and cooking and even taped all the daggy 80’s cooking shows to watch them over and over again and copy what the pros were doing. He really takes pride in hiscontinue reading…

Vanilla Butter Cake Recipe

This is one of the easiest vanilla butter cake recipes I’ve ever made, and for those interested I found it in Super Food Ideas Australia magazine. It is SO fluffy and sweet. Honestly, it sounds really boring to me but one’s it’s baked – it’s one of the most moreish and delish things in this world!! Butter Cake Recipe 125g butter, softened 1 teaspoon vanilla extract ¾ cup caster sugar 2 eggs, lightly beaten 1 ½ cups self-raising flour, sifted ½ cup milk Using an electric mixer, beat butter, vanilla and sugar until light and fluffy. Add eggs, 1 atcontinue reading…

Laurie’s Monkey Cake

My friend Laurie asked me to make her a cake for her birthday with her favourite childhood toy on top. This is ‘Monkey’. I had a small photo to copy that she texted me on my phone. Back then I had only a little experience making fondant 3D figurines. My biggest challenge on this cake was getting the arms attached to the body… My biggest mistake was letting the pieces dry without giving them some way of attaching them onto the body later. If you have little experience with figurines: note that dry fondant will not stick to dry fondant! Notcontinue reading…

Soccer Ball Cake / Paul’s 50th

The brief for this cake was to make something related to soccer for a friend of ours by his wife. They were throwing a party for about 50 people for Paul’s 50th. She didn’t mind what flavor it was but did like the idea of mud cake. The Soccer Ball I decided to make this design so I could cater for the 50 people and thought the ‘3D ball’ would add an interesting talking point. The ball was made from the Wilton 3D Ball Pan which was easy to use by following the included instructions. My mistake with this though, was makingcontinue reading…

Christmas Cake Pops

In the lead up to Christmas, my friend and I decided to enrol in a cake pops course one night after work. We wanted to learn some quick tricks to making Christmas characters. And let’s be honest – cake pops are more fun without all the preparation of ingredients and mess!!! 😉 I let someone else take care of all that! These were done at a course at my favourite cake shop – this bouquet is no credit to my own creativity. The instructor had already planned the designs and simply showed us how to replicate them. Reindeer This designcontinue reading…

My Own Birthday Cake – Pink and Yellow

Two-Tiered Yellow and Pink Fondant – my two favourite colours! Every year my family says they will buy me a cake and they feel terrible about me making my own. But I thoroughly love baking and decorating something for myself! This cake was an excuse to try some new recipes and the swirl design on the top tier. Inside I had 2 different types of caramel mud cake. The top tier had quite a golden syrup flavour and the bottom tier tasted more like white chocolate mud… this is why I am still searching for the ultimate caramel mud cakecontinue reading…

Parramatta Eels cake

My friend asked me to decorate a cake for her dad’s 60th birthday. She had a fruit cake ready to go and the only request was that it had a Parramatta Eels theme. (For any non-Aussies, the Parramatta Eels is one of our major Rugby League clubs. They’re iconic in football). Oh dear, this was not one of my best works… but that’s the fun of learning!! I was kind of organised and managed to make a 3D eel in advance without the final details but I didn’t really think through the ‘how’ of sticking it to the cake… andcontinue reading…
